Cream the eggs and brown sugar (substitute brown sugar with Xylitol for hard core dieters). |

Add the vanilla and milk and mix well. Add the wheat bran and oats and mix. |

Sift the self raising flour and baking powder together. Add to the wet ingredients and mix well. |

Grease a flat bottomed frying pan with vegetable oil. Drop spoonfuls of batter into pan. Turn and cook other side when bubbles break on surface of crumpet. Heat should be medium-high to get a golden brown colour. Remember to use fresh oil with each batch. |

Serve with cheese, jam, honey, butter of combination of these. Yummy on its own as well. |

Note: you can add two teaspoons of flavoured whey protein if you do not want to serve it with something sweet. |
