1. Preheat the oven to 180 °C.
2. Line a cupcake tray by spreading a thin layer of butter in each mold.
3. Slice onions and mushrooms, and lightly fry together with the olive oil in a pan until the onion is translucent and the mushrooms have released most of their water. Drain excess water. Season as you wish.
4. Pour egg whites into the cupcake tray around half full.
5. Add in mushrooms, onion, and chopped baby spinach. Top each with crumbled feta.
6. Bake in the oven for 25 minutes.
