Directions

1. First, make the crust, by mixing the coconut and almond flour together with water and butter. Press into a pie dish and bake at 180 Celsius for 15 min. Let it cool down.
2. Blend eggs, cream cheese and salt in a blender. Pour the mixture onto the pie crust. Spread the spinach (cooked or frozen and thawed) on top. Sprinkle feta over the top.
3. Bake in the oven at 180 Celsius for 25-30 min or until the centre is firm.
