Lemon Butter Chicken
Delicious oven baked chicken in lemon butter sauce.

Ingredients
Directions
1. Preheat oven to 200c.
2. Season chicken thighs with paprika, salt and pepper to taste.
3. Sear chicken in 2 tbsp of butter skin side down first, for 2-3 min aside in an oven proof pan.
4. Chop up the baby spinach.
5. Melt remaining butter, add garlic and cook for 1 min.
6. Add chicken broth, stir in cream, parmesan cheese, lemon juice and thyme.
7. Bring to boil to reduce, lower the heat add spinach and cook for 3-5 min.
8. Place chicken in pan and Place in oven for 25-30 min.
