Preheat oven to 180 °C. |

In a large bowl, combine coconut flour, salt, baking powder and cinnamon. |

In a separate bowl, mix the eggs, melted butter, vanilla and honey. Whisk the ingredients together to ensure everything is blended through. |

Slowly pour the wet ingredients into the large bowl containing the dry ingredients. Stir until a consistent batter is formed (in this step you may add some nuts, or raisins or cranberries or any dried fruit). |

Grease a muffin baking dish. Pour the batter into the dish and bake for about 20 minutes. |
