Directions

1. Preheat your oven to 190°c and spray a little olive oil cooking spray into a loaf pan.
2. In a bowl, combine the chicken mince, garlic, mustard, onion, paprika, egg, three quarters of cheese and crushed pepper.
3. Mix to combine and then spoon into your greased pan. With your hands, push the mince mixture into the pan so it is compacted tightly, smooth and even on top.
4. Bake in the oven for 25-30 minutes or until the top is browned.
5. Remove from the oven and cover the top with the remainder of the cheese.
6. Bake for a further 10-15 minutes, until cooked through and browned on top.
7. Remove from the oven and let rest for a few minutes before slicing and serve with your favorite healthy side dish like steamed green vegetables or salad.
