Directions

1. Sift all dry ingredients in a large mixing bowl. Then add the grated carrots, grated apple, coconut and raisins.
2. In a bowl, whisk together the egg, oil and vanilla. Then add the egg mix to the other ingredients and mix well to combine.
3. Bake in greased muffin pans at 180 degrees C for 25 to 30 minutes.
4. When cooked, remove from pan and cool on a cooling rack.
